Preparation Method:
- Heat the oil in a pot over medium heat.
- Add the onion and sauté until it softens and turns golden.
- Add the garlic and ginger, and sauté for a minute.
- Add the spices and stir well until fragrant.
- Add the tomatoes and cook until the sauce thickens.
- Add the chicken pieces and stir until they are coated with the sauce.
- Add the coconut milk and water, and bring the mixture to a boil.
- Reduce the heat and cook for 20–25 minutes until the chicken is cooked through.
- Garnish with fresh coriander and serve with rice or naan bread.
